Easy Roasted Asparagus 

Here is a super simple recipe for making delicious roasted asparagus in a snap. I considered the fact that due to the simplicity of this recipe maybe it doesn’t actually need to be blogged, but I didn’t always prepare my asparagus this way, so maybe this would be helpful to others who love this vegetable as much as I do. Aside from grilling, I used to make asparagus by coating it in olive oil and using a frying pan or a sauté pan on the stove top. The result was very tasty, but it made a mess and I had my share of hot oil droplets shooting out and burning me; it didn’t occur to me to use a screen… But even so, it became smokey, and I would have to clean the pan etc.  I also used to cook bacon that way (sans the olive oil) but then I discovered a better way and started baking my bacon on a parchment lined cookie sheet (with edges to catch the grease) and thought I should try that with asparagus. What a difference! Same great taste, no oil splattering, I can fit more asparagus on the cookie sheet, I don’t have to stand there and tend to the pan of splattering oil, and there is no clean up!

Preheat oven to 350,

Line a cookie sheet with unbleached parchment paper (aluminum foil pictured, but do not use AF for cooking- old photo…),

Remove tough ends of asparagus,

Arrange asparagus on the cookie sheet,

Drizzle with avocado oil or olive oil,

Use hands to roll them around to coat,

Sprinkle with salt or spice of your choice,

Bake for 20-25 minutes depending on the amount/thickness and your preference,
